A highly regarded, dry sherry produced by Bodegas Lustau in Jerez de la Frontera, Spain. Part of the Solera Familiar range, it is named "Escuadrilla" (Spanish for "squadron") in tribute to the Air Force wing Emilio Lustau once belonged to.
Nose: Pronounced aromas of toasted hazelnuts, almonds, smoky wood, and orange marmalade with subtle saline hints.
Palate: Bone dry, powerful, and full-bodied. It features flavors of dried fruits, salty sea breezes, and a distinct umami character.
Finish: Very long, persistent, and slightly spicy with a refined dryness.
Style: A "Rare Amontillado" that undergoes two types of aging: biological (under a veil of flor) for 4 years, followed by 8 years of oxidative aging.
Grape: 100% Palomino.
Color: Bright amber with golden reflections.
Pairings: It excels with savory and complex dishes:
Meats: Cured meats (like Jamón Serrano), cold cuts, and consommés.
Vegetables: Notably difficult-to-pair artichokes and asparagus.
Seafood: Smoked fish and rich, flavored fish dishes.
Cuisine: Frequently recommended as a partner for spicy Asian cuisine.
