Dessimis is crafted in the traditional regional ramato (copper-colored) style. Pinot Grigio is a pink-to-grey-skinned mutation of Pinot Noir. By allowing the juice brief skin contact during fermentation, winemaker Gianfranco Gallo extracts the grape’s natural pigments, resulting in a striking pale copper or platinum-pink hue in the glass.
The Bouquet: Intensely aromatic, mixing unique notes of ginger-infused peach, wild mint, incense, dried citrus peel, and sweet almonds.
The Palate: Bold, concentrated, and textured. It spends nine months maturing on the lees in French oak barriques, yielding a creamy mouthfeel, notable phenolic grip, and structural tannins that allow it to drink almost like a light red wine.
The Finish: Crisp, firm, and mineral-driven with a distinctly savory, salty snap that cuts through the rich fruit.
