A highly regarded sparkling wine from Catalonia, Spain, known for its extreme elegance, mineral precision, and pale, sophisticated hue. Though often associated with Cava, the producer famously left the Cava DO in 2012 to create the more strict Conca del Riu Anoia designation, focusing on local terroir and biodynamic farming.
Appearance: Very pale pink, sometimes described as "onion skin" or copper-tinted.
Aromas: Clean and crystalline with notes of citrus, white fruit, red flowers, and a hint of Mediterranean herbs like lemon thyme.
Palate: Precise and dry (Extra Brut/Brut) with fine, integrated bubbles. Expect flavors of white cherry, raspberry, and green apple, followed by a savory, lightly salty, and chalky finish.
Style: A "white wine soul" rosé—it is predominantly a white blend with a small addition of red grapes for color and structure.
Grapes: A traditional blend of Xarel·lo, Macabeo, and Parellada, with roughly 5% Monastrell (Mourvèdre) added for its pale pink tint and light fruit-skin grip.
Farming: Certified Biodynamic (Demeter) and organic, utilizing 16-million-year-old marine fossil soils that contribute to its signature saltiness and minerality.
Production: Made using the traditional method (Champenoise)
