A highly distinct, bone-dry white wine produced by Bodegas Los Bermejos in the Lanzarote D.O. of Spain's Canary Islands. Crafted entirely from 100% Malvasía Volcánica, an indigenous grape crossing unique to the region. It is celebrated globally for its intense, shimmering salinity, electric acidity, and unmistakable smoky, volcanic mineral backbone.

Aromas: A complex blend of green mango, lemon zest, white peach, and wild dried thyme, backed by a striking flinty or smoky salt aroma.

Palate: Crisp, bright, and medium-bodied. It is fermented entirely in stainless steel tanks and aged on its fine lees, adding a slightly velvety texture that perfectly balances its searing, mouthwatering acidity.

Finish: Long, refreshing, and clean, leaving a distinct impression of marine salinity.

Los Bermejos Description

The Soil: Vines are planted directly into deep layers of black volcanic ash and petrified lava, known locally as picón.

The Hoyos: Because of fierce Atlantic winds and dry conditions, each ungrafted vine must be planted by hand inside a 2-meter-deep stone-walled pit (hoyo) to trap moisture and block the wind.

Zero Mechanization: Due to the terrain, all harvesting is done manually using small boxes to protect the clusters.

Food Pairings: Thanks to its high acidity and saline qualities, the 2025 vintage pairs beautifully with: [1]

Fresh Seafood: Sushi, raw oysters, seafood paella, and grilled white fish.
Canarian Specialties: Traditional dishes like sancocho canario (salted fish dish).
Light Starters: Green salads, goat cheese, or light tapas.
