A highly acclaimed, 100% Chardonnay white Burgundy wine produced by brothers Didier and Pascal Picq in the village of Chichée, France. It is renowned for its pure, unoaked expression of Chablis terroir, prominent limestone minerality, and vibrant acidity.
Style: Bone-dry, crisp, and mineral-driven. The estate entirely avoids wood aging, fermenting and aging the wine exclusively in stainless steel tanks to maintain maximum purity.
Aroma: Complex bouquet of green apple, sea breeze, shucked oyster shells, and citrus peel, accompanied by distinct notes of crushed anise and smoky petrichor.
Palate: Medium- to full-bodied with a rich, silky texture that balances the racy, mouthwatering acidity. A wave of saline, stony minerality floods the mid-palate and leads into a long, grapefruit-inflected finish
Terroir: Sourced from a 3.5-acre, southwest-facing Premier Cru plot featuring nutrient-dense brown marl limestone soils.
Vine Age: Highly concentrated fruit harvested from mature vines planted between 1961 and 1986.
Food Pairings: Outstanding foil to freshly shucked oysters, moules marinières, and raw sashimi. Its native acidity also beautifully cuts through richer, creamier seafood or poultry dishes.
