From the village of Aÿ, renowned for its Pinot Noir-dominant profile and exceptional value among high-end sparkling wines. Produced by 12th-generation winemaker Louis Cheval-Gatinois, it is characterized by its powerful structure and rich texture, often compared to the style of house Bollinger.
Appearance: Deep golden hue with subtle coppery reflections.
Aromas: Opens with fresh notes of pear, lime blossom, and black cherry, evolving into more complex layers of earth and spice.
Palate: Full-bodied and resonant with flavors of kirsch, plum, and dried flowers. The finish is often noted for its saline minerality and toasty brioche notes.
