A highly regarded red Burgundy crafted from 100% Pinot Noir. The 2021 vintage is noted for its freshness and elegance, often compared to the style of the 1980s but with modern concentration.
Described as having a "pleasing strictness" with notes of black cherries, wild strawberries, crushed violets, and a hint of black olive.
Terroir: Sourced from a 0.72–0.73 hectare parcel on steep slopes with reddish-brown soil and limestone fragments.
Winemaking: Dujac typically uses significant whole-cluster fermentation (stems included) to add structure and spice; for the 2021 vintage, this was roughly 81.3% stems.
Aging: Typically matured for 14 to 18 months in oak barrels, with a significant proportion of new wood used to refine tannins.
