A rare, old-vine white wine from the Côtes Catalanes IGP in the Roussillon region of France. Produced by Daniel and Cathy Laffite, it is often noted for its "White Burgundy" character—offering a rich, viscous mouthfeel balanced by a salty, slighty oxidative mineral finish.
Nose: Accents of earth, hay, fennel pollen, and honey.
Palate: Notes of vanilla, melon, lemon citrus, and kumquat.
Finish: Long and invigorating with a distinct salty mineral-laden tail.
Food Pairings: Pairs exceptionally well with creamy celery root soup, lobster, Caesar salad, French blue cheeses, and hearty fish stews.
A blend typically composed of 70% Grenache Gris and 30% Carignan Gris. Some sources also note equal 50/50 splits depending on the specific parcel yield.
Winemaking: Crafted from vines with an average age of 65 years grown in clay and granite soil. It is fermented using traditional methods and is bottled unfiltered at the domaine.
