A dry white wine from the Alsace region of France, produced from 100% Pinot Auxerrois grapes. It is characterized by its use of "Vieille Vigne" (old vines) that are over 35 years old, which contributes to a more concentrated and complex profile compared to standard bottlings.
Aromas: Fragrant nose featuring mineral-laden fruit. Common descriptors for this wine include notes of peach, orange, white flowers, and white pepper.
Palate: A round-textured, medium-bodied wine with flavors of apples, stone fruits, and river stones.
Structure: It is known for balancing freshness with a supple mouthfeel. While typically dry, it may contain a small amount of residual sugar (up to 8–9 grams), which provides a hint of richness without being sweet.
Finish: It concludes with a refreshing, clean, and sometimes floral finish.
Harvest: This is typically the first parcel harvested each fall at the domaine.
Technique: The wine is vinified with ambient yeast in neutral tanks to preserve its varietal character and minerality. Pressing is kept very light to avoid extracting any bitterness from the grape skins.
