A highly precise, dry French rosé crafted by winemaker Roselyn Gavoty in the sun-kissed Côtes de Provence region.
Tasting Notes: Pale pink in color. The nose displays fresh, expressive red berries dominated by strawberry. The palate is crisp, precise, and mouth-watering, balancing racy acidity with a surprisingly greedy, satisfying volume.
Founded in 1806 when Philémon Gavoty acquired the Roman-era farm, the 110-hectare polycultural estate features 50 hectares of certified organic vineyards. Current winemaker Roselyne Gavoty-Bonnet represents the eighth generation, focusing on deep textures, complexity, and structural architecture over mass-produced, lightly flavored trends
Grape Composition: The blend features roughly two-thirds Cinsault and one-third Grenache, with Carignan playing a minor structural role.
Winemaking Process: The estate avoids immediate press-by-rote methods. Grapes macerate for several hours before pressing. The saignée (bled juice) and first-press juice are vinified separately, then blended together to achieve an exact equilibrium of tenderness and structural architecture.
