A highly regarded, boutique 100% Chardonnay from a rising star producer based in the village of Baubigny, Burgundy. It is celebrated as an exceptional-value alternative to the increasingly expensive whites of the neighboring Côte de Beaune.
Body & Style: Medium-to-full-bodied, dry, complex, and harmonious.
Tasting Notes: Driven by crisp acidity and integrated oak, the palate features notes of lemon, yellow pear, crunchy apple, vanilla, and a distinct chalky minerality.
Terroir: Sourced from high-altitude, cool-climate, clay-limestone soils nestled in a valley between Saint-Aubin and Saint-Romain.
Farming & Vinification: Practicing organic/natural farming. The grapes are hand-harvested, fermented with indigenous yeasts, and aged for 10 months in oak barrels (with a minimal 20% new oak to preserve freshness)
Food Pairings: Pairs exceptionally well with poultry (chicken and turkey), roasted white meats, or rich fish dishes.
