Widely regarded as the original and benchmark for Barolo Chinato, an aromatized and fortified wine from Piedmont. It was invented in the late 19th century by Dr. Giuseppe Cappellano, a pharmacist who developed the recipe as a medicinal tonic and digestive aid.
Style: It is a bittersweet, complex elixir with a garnet-red color and orange reflections.
Aromas: Intense notes of dark cherry, dried roses, and bitter orange peel mixed with "Christmas spices" like clove, cinnamon, and cardamom.
Palate: A rich, velvety texture with a balance of sweetness and herbal bitterness. Flavors often include dark chocolate, mint, licorice, and tobacco, leading to a long, persistent finish of quinine and spice.
Secret Recipe: The recipe includes a base of aged Barolo DOCG (often from the famed Gabutti vineyard) infused with a secret blend of dozens of herbs, barks, and spices—notably Cinchona calisaya (quinine bark).
