A natural, organic white wine from the high-altitude Montmell Mountains in Penedès, Spain. Created by Pepe Raventós (of Raventós i Blanc), it focuses on minimal intervention and expressing the high-limestone terroir of the estate.
Texture: Medium-bodied with a "chalky edge" from the high-altitude limestone soils.
Aromas: Wild mint, bay leaf, fennel, and Mediterranean herbs combined with green apple and pear.
Palate: Precise and dry with a "honey-like smooth acidity" and a distinctive saline thread. It often has a subtle, pleasant bitterness on the finish.
Grape: 100% Xarel-lo from vines aged 45–85 years.
Winemaking: Fermented with indigenous yeasts in 80% stainless steel and 20% concrete tanks.
Aging: Matured on fine lees for 3 months with twice-weekly stirrings (batonnage) to add texture.
Natural Approach: No additives, un-stabilized, and unfiltered.
