Mezcalum is produced in Santiago Matatlán, Oaxaca, by fourth-generation Maestro Mezcalero Carlos Méndez Blas. The production follows traditional artisanal methods:
Roasting: Agave hearts (piñas) are roasted for five days in earthen pits.
Milling: The roasted agave is crushed using a traditional stone Tahona wheel.
Fermentation: The mash undergo natural, open-air fermentation in wooden vats.
Distillation: It is double-distilled in copper pots (though some sources mention clay pot techniques used by the family).
