A dry Sherry from Jerez, Spain, known for its intense oxidative character and complex nutty profile. It is part of Lustau’s Solera Familiar range and is crafted from 100% Palomino Fino grapes.
Aroma: Pungent and powerful, featuring notes of walnuts, toasted almonds, smoked wood, and tobacco.
Palate: Full-bodied and concentrated. It offers rich layers of bitter chocolate, roasted chestnuts, dried fruits (like figs and prunes), and espresso.
Finish: Long and very dry, balanced by a sharp, tangy acidity and a lingering warmth of spice and wood soot.
Oxidative Aging: Unlike Fino or Manzanilla, Don Nuño is fortified to 18% alcohol early to prevent the growth of "flor" yeast, allowing it to age in full contact with oxygen.
Solera System: It is aged for an average of 12 years in American oak barrels within a traditional solera and criaderas system.
Food Pairing: Its robust structure makes it an excellent match for rich, savory dishes:
