The Alary family's involvement in wine production dates back to 1692, during the reign of Louis XIV. Ten generations have successfully played their part in building this edifice, guided by a healthy respect for nature and the environment. This conviction is evidenced in Denis' decision in 2009 to convert to organic farming after many years of mastering traditional production techniques.

Grapes are exclusively harvested by hand at low yields from clay soils at the foot of the plateau of scrubland in Cairanne. Sorting is in the vineyard, and another sort is at the cellar's entrance. The nose is very open, with red fruit and mild spices (white pepper), notes of garrigue, and persistent aromas of bay leaf and rosemary.
