Eric Bordelet Sidre is a premium line of sparkling French ciders from southern Normandy, crafted by a former sommelier using biodynamic farming and winemaking techniques. Bordelet applies the rigor of fine wine production to apples and pears, using dozens of heirloom varieties from trees that are often over 50 years old
Sidre Brut Tendre: A semi-dry (demi-sec) cider that balances fruitiness with structured acidity. It contains 25–35 grams of residual sugar per liter, making it "off-dry" rather than strictly sweet.
Biodynamic Farming: The 23-hectare estate (Château de Hauteville) is certified organic and follows biodynamic principles to enhance fruit quality.
Ancestral Method: Fermentation occurs naturally using indigenous yeasts, with no added sugar (sucrose). The carbonation develops naturally in the bottle.
Variety: Bordelet uses a blend of roughly 40% sweet, 40% sour/bitter, and 20% high-acid apples to achieve a balanced profile.
