Vinification : Grapes are harvested by hand in the beginning of October, then macerated for 12 days and fermented at a controlled temperature of 83°F with a selected strain of yeast in stainless steel tanks.
Aging Process : Matured in French oak barrels for 14 months and then aged in the bottle for at least 24 months
Appearance: An intense ruby color.
Aroma: It has an ample and complex bouquet with aromas of ripe cherry, hints of sweet spices, plum, tobacco, pepper, tar.
Mouth Feel: Full, soft and velvety on the palate, it is characterized by sweet and elegant tannins, long notes of fruit and a spicy finish. Of remarkable structure, it is very long-lived.
Food Pairing: Ideal with meats, especially roasts, game, wild boar, lamb chops, with dishes based on spices, mushrooms and truffles, with seasoned cheeses such as provolone, parmesan and gorgonzola.
Eucalyptus and anise notes on the nose carry through to flavors of dried currant and grilled plum. This rich red is fresh and focused, medium- to full-bodied and framed by sculpted tannins. Offers a lasting, minerally finish. Best from 2020 through 2028. 1,666 cases made, 100 cases imported.
