Left bank of Tarn, gravel
Harvested by hand. The grapes are brought by vertical drop to the pneumatic press. After a medium settling, the fermentation is controlled at a temperature of 16 to 17 degrees. The wine will be bottled in the harvest year.
Grapes: 60% Sauvignon Blanc 40% Ondenc
Aromas: Grapefruit, Melon, and Kiwi
These flavors continue on with orange citrus notes entering on the mid-palette. Nice and dry finish with all these tones lingering on the palette.
Food Suggestion: To be enjoyed as an aperitif and in combination with charcuterie, cold fish and shellfish.
