Paumanok Minimalist Chenin Blanc 2016
A special, select hand harvest of only the most pristine clusters from our oldest Chenin Blanc vineyard, planted in 1982, was performed to obtain the grapes used to make this wine. The fruit was pressed whole cluster. The juice was transferred to stainless steel barrels in which alcoholic fermentation spontaneously occurred. Other than a minimal amount of sulfites, nothing was added to the wine. It remained in steel barrels for 7 months prior to bottling. It is sealed with a screw cap to preserve freshness and cleanliness.
