The color is almost black with a dark red-brick hue. The nose is elegant and filled with ripe fruit. Black berries, prunes, cassis, fine toasted oak, grape skin (lees), and some licorice. The mouth-feel is lush and vibrant with elegant ripe fruit that is backed by layers of ripe lush tannins, great minerality and black chocolate notes. There is great precision and structure from start through the long finish. This is a young Cabernet Sauvignon that will be long-lived and will get better and better with every year. Serve this robust Cab with the classic pairing of lamb, or try other meats like a grilled strip steak with arugula pesto and Port wine beef short ribs. For fish dishes, pair it with swordfish or shark. Also try with aged Gouda, truffle pasta or just savor it on its own.

Wine AdvocateThe 2013 Cabernet Sauvignon "Cassango" is 82% Cabernet Sauvignon from Pellegrini Vineyards and 18% Merlot from Leslie Alexander's Vineyard; aged for 20 months in a mixture of new (30%) and used (70%) French and American oak. It comes in at 13.5% alcohol. This is probably a pretty good year for Cabernet, relatively speaking. Nicely balanced and elegant, this is cool and composed, with nice texture and moderate tannins. There is a hint of char in the back, perhaps some herbaceousness, perhaps a touch of reduction. It should get better with time. It mostly blew off in an hour. This elegantly crafted Cabernet wasn't my favorite of the reds-the others seem more expressive, for one thing-but it is still very pretty.
