VARIETAL NOTES : Palomino Fino
VINEYARD : The grapes for this Manzanilla come from Pago Miraflores in Sanlucar de Barrameda very close to the Atlantic.
SOIL: Albariza or a white chalky soil. When wet it sheds water to deeper soils and as it dries it "clods" creating a protective layer that slows the evaporation of water from below.
VINIFICATION: The wine is fermented in stainless steel tanks in Sanlucar.
AGING : The wine undergoes biological aging under veil of flor for over 5 years in Sanlucar de Barrameda. There are 6 criaderas + the Solera. The solera is the most famous Manzanilla solera called Misericordia with a very long and rich history.
NOTES : Very dry, crisp and fresh with a slightly salty finish.

Peach pit and nectarine skin notes course along, pushed by sea salt, singed orange rind and walnut accents. Shows lots of tangy nerve through the finish. Very refreshing, with excellent cut. Drink now.
